What is Brine Solution?
Brine, or salt water, is a highly concentrated water solution of common salt (sodium chloride). We use brine widely to process and cook food.
- You can use it to preserve or season food;
- Pickling is the process of brining various foods — vegetables, cheeses, and even fruit;
- Brining can enhance the tenderness and flavor of the food product;
- You can add additional ingredients, like herbs, spices, sugar, or vinegar, to improve the taste;
- Pickling in salt brine is associated with anaerobic fermentation and the production of lactic acid bacteria;
- Different products require different salt brine solutions: most vegetables ferment at 2.5%–5%, while some products (e.g., olives) need 10% brine.
How to Calculate Brine Percentage?
The formula for brine concentration is:
concentration (%) = msalt / (Vwater × ρwater) × 100%
Where:
- concentration — brine concentration in %;
- msalt — mass of salt in grams (g);
- Vwater — volume of water in milliliters (mL);
- ρwater — density of water ≈ 1 g/mL.
Since the density of water is approximately 1 g/mL, the formula simplifies to:
concentration (%) = msalt (g) / Vwater (mL) × 100%
Brine Calculation Example
You need 2.5 liters of 2% brine:
- Convert volume: 2.5 liters = 2500 mL
- Rearrange formula: msalt = concentration / 100 × Vwater
- Calculate: msalt = 0.02 × 2500 mL = 50 g of salt
You need 50 grams of salt to get 2.5 liters of 2% brine solution.
